OVEN BAKED BAR-B-QUE CUBED STEAK

I haven’t done Menu Planning Monday in awhile, so I decided to go ahead and do it this week since the boys are on Fall Break and I am back to menu planning breakfast, lunch and dinner for this week. This is a big task since I feel like a beached whale and my feet and ankles are swollen. (My fiance so lovingly refers to them as cankles now.) I think I am going to take a hint from some of the countries overseas and make lunch the biggest meal of the day for this week and have very simple dinners instead. We’ll see how that works out. I also have a recipe below for Oven Baked Bar-B-Que Cubed Steak.
BREAKFAST:
- Monday: Grits and sausage links.
- Tuesday: Cereal.
- Wednesday: Bagels and cream cheese w/ fruit salad.
- Thursday: French toast and bacon.
- Friday: Cereal.
- Saturday: Cinnamon rolls.
- Sunday: Strawberry cheesecake muffins.
LUNCH:
- Monday: Oven Baked Bar-B-Que cubed steak w/ string beans and pinto beans.
- Tuesday: Baked Chicken w/ greens and corn.
- Wednesday: Taco bar.
- Thursday: Fried pork chops w/ great northern beans.
- Friday: Fried naked chicken w/ french fries and sweet potatoes.
- Saturday: Popcorn shrimp salad.
- Sunday: Grilled fajita sub sandwiches.
DINNER:
- For dinner, things will be kept simple this week. So I am thinking that there will be lots of salads and sandwiches along with leftovers from lunch.
OVEN BAKED BAR-B-QUE CUBED STEAK

INGREDIENTS
- pack of cubed steak
- one small onion
- two cans of sliced potatoes
- two cups of Kraft Original bar-b-que sauce
- 1/4 cup of honey
- 2 tablespoons of mustard
- 1/8 cup of all purpose flour

INGREDIENTS
- pack of cubed steak

Optional Ingredients:
- seasonings to taste
TOTAL OVEN COOK TIME: 1 hour and 30 minutes
DIRECTIONS:
- Preheat your oven to 350 degrees.
- Slice your small onion into big, chunky pieces.
- Combine the sliced onions and cubed steak in the bottom of a nonstick baking dish.
- Combine the bar-b-que sauce, mustard, honey and flour in a mixing bowl, and mix until well blended.
- Pour mixture over the cubed steak and onions and put on the center rack of your oven for one hour.
- After one hour, drain the liquid off of the two cans of sliced potatoes and mix them in with the cubed steak.
- Place in the oven for 30 additional minutes.
- Plate and serve!
