CHEESY BROCCOLI & HAM QUICHE

 

I am happy to say that I am trying out a new recipe this week. I have never before had a quiche, so I was excited when I found a recipe online for a basic quiche. It was really plain, it had nothing in it but eggs and cheese. Well, the experimenter in me decided to add a few things to it and that is when I came up with the recipe for the Cheesy Broccoli and Ham Quiche. It’s really easy and simple to make and as everyone knows I am all about that. So here is my menu for the week followed by the recipe for this yummy quiche.

CHEESY BROCCOLI & HAM QUICHE (8 servings)

 


Ingredients:

  • 2 cups of milk
  • 4 eggs
  • 3/4 cup of biscuit baking mix
  • 1/2 stick of butter, softened
  • 1 cup shredded Parmesan cheese
  • 1 cup shredded cheddar cheese
  • 1 1/2 cups ham, cubed
  • 1/2 cup onions, sauteed
  • 12 ounces of chopped broccoli, (defrosted if frozen)
  • 1/2 tsp each black pepper, onion powder and garlic salt

Directions:

  • Preheat oven to 375 degrees. 
  • Dice up on small onion and saute it with a little bit of the butter and all of the seasonings.
  • While the onions are sauteing, mix together the milk, egss, biscuit baking mix, butter and Parmesan cheese.
  • Add the ham, cheddar cheese, broccoli and sauteed onions to the mixture.
  • Pour the mixtures into a baking dish and bake for 40 minutes to an hour. (You will know it is done once a butter knife is inserted in the center and it comes out clean.)

 

  • Once the quiche is done, let it cool for five minutes then enjoy.

  1. I used to love making quiche in college. Quick, easy and inexpensive. It worked for me! I am not into the quiche so much anymore but thanks for helping me bring up some fond memories.

  3. Quiche is one of my favorite discoveries as an adult. I hated it as a kid. Yours doesn’t seem to have a crust. Am I missing it? This could be a great option for my kids who like the eggs, ham and chees but don’t like the crust. Thanks!

  4. YUM! Ham, cheese and broccoli is a favorite combo of mine. My kids won’t eat it though. They’re sooooo picky, it drives me nuts!

    I am not a fan of crust, so I decided to omit it from this recipe. I guess that this is just a basic recipe, but it taste oh so good. I am in love with it and have already made plans to try different things in it.

    I love ham, cheese and broccoli together too. It is a delicious combo. Maybe you could make this for your husband as a date night dinner. It’s really quick and simple and if you cut the ingredients in half, it makes enough for four servings.

    DILL SMOKED SALMON QUICHE

    Half Double-Crust sour cream pastry recipe

    FILLING:
    3 oz (90 g) smoked salmon, chopped
    1/4 cup (50 mL) cream cheese, diced
    2 eggs
    1/2 cup (125 ml) milk
    4 tsp (20 ml) chopped fresh dill
    1 green onion, minced
    pinch each salt and pepper
    Preparation:

    Double-Crust Sour Cream Pastry recipe for crust Ingredients:

    2-1/2 cups (625 mL) all-purpose flour
    1/2 tsp (2 mL) salt
    1/2 cup (125 mL) cold butter, cubed
    1/2 cup (125 mL) cold lard, cubed
    1/4 cup (50 mL) ice water (approx)
    3 tbsp (50 mL) sour cream
    Preparation:

    In large bowl, whisk flour with salt. Using pastry blender, cut in butter and lard until in fine crumbs with a few larger pieces.

    In liquid measure, whisk water with sour cream. Drizzle over flour mixture, tossing briskly with fork and adding a little more water if necessary, until ragged dough forms.

    Divide in half; press into 2 discs. Wrap; refrigerate until chilled, 30 minutes. (Make-ahead: Refrigerate for up to 3 days or freeze in airtight container for up to 1 month.)

    On lightly floured surface, roll out pastry to generous 1/8-inch (3 mm) thickness. Cut out six 4-3/4-inch (12 cm) rounds. Fit into six 4-inch (10 cm) round tart pans with removable bottoms, without trimming. Prick all over with fork. Place on large rimmed baking sheet; refrigerate for 30 minute
