RECIPE: FRIED SWEET POTATOES

Fried Sweet Potatoes sc

My family loves  to eat sweet potatoes. There are so many different ways that you can prepare them. I have used them in main dishes, side dishes, and even dessert dishes. Because sweet potatoes already have a hint of sweetness in them, I decided to try something different. I love the combination of sweet and salty. Kettle corn is a favorite snack of mine, so I decided to try to combine the sweetness of the sweet potatoes with a little bit of salty. What did I come up with? Fried sweet potatoes. This is a family favorite of mine, and I can guarantee it will be a family favorite for yours.

INGREDIENTS:

  • 3 – 4 large sweet potatoes, sliced
  • 1 small onion, diced
  • 1/8 cup of brown sugar
  • 1 tsp of sugar
  • 1 tbsp of salt
  • 4 tbsp of butter

DIRECTIONS:

  • First, you need to wash your sweet potatoes very well. After your sweet potatoes have been washed, peel them and slice them. You can either cut your sweet potatoes in circles or you can cube them. Both ways will work just fine.
  • After you have washed, peeled and cut your sweet potatoes you will need to dice your small onion. Make sure that you don’t cut the onion too fine, you want to be able to see them when the dish is prepared.
  • Heat your 4 tablespoons of butter in a sautéing pan set to medium high. Once the butter has start to sizzle add in your sweet potatoes, diced onions and salt.
  • Continue to cook until the sweet potatoes start to get tender. (About 5-10 minutes.) Once your sweet potatoes start to soften, add in the brown sugar and sugar.
  • Reduce the heat to medium low, cover and allow the potato mixture to simmer for ten more minutes.
  • Once done, plate and serve as a yummy side dish for dinner or a delicious main dish for lunch.

    I can’t wait to try this out. My grandmother likes to go out to the countryside and buy sweet potatoes by the bushel so this gives me another way to get rid of all of those sweet potatoes.
