RECIPE: FIESTA CHICKEN

I am all about cooking healthy meals for my family. I want them to eat a balanced meal, but I don’t want to spend all day in the kitchen cooking it. I absolutely despise staying in the kitchen longer then I have to. With four boys I don’t have the luxury of planting myself in the kitchen for too long without some kind of disaster happening in my house.
I am always looking for ways to prepare healthy, but quick, meals that I can start in the kitchen and basically let it cook by itself while I am supervising my family. If your family likes chicken, and you like NOT being in the kitchen for longer than 30 minutes, then this recipe is for you.
INGREDIENTS:
- bag of shredded cheese, taco flavored
- jar of Pace chunky salsa
- boneless chicken breast
- butter
- seasonings to taste:
- garlic salt
- season salt
- accent
DIRECTIONS:
- Preheat your oven to 325-350 degrees. This all depends on your oven.
- Clean your chicken breast very thoroughly. Slice each individual chicken breast into four strips.
- Tear pieces of aluminum foil big enough to accommodate the chicken breast.
- Place two tablespoons of butter in the middle of the aluminum foil. Place an entire chicken breast, or four chicken breast strips, on the top of the butter. Season the chicken breast with your seasonings of choice.
- Place four to five tablespoons of salsa onto the chicken breast.
- Sprinkle a very nice helping of cheese on top of the salsa.
- Roll the aluminum foil and bake the chicken for 15-20 minutes, depending on the thickness of your chicken breast.
