I am a huge fan of quick, easy and healthy meals for my family. If at all possible, I try to stick to ten ingredients or less. (And that includes the seasonings that I use.) Since becoming pregnant, I have been craving soup. Especially early on in my pregnancy. My favorite? Broccoli Cheddar Soup. I love cheese and I love broccoli, so the combination is perfect. What I didn’t love was paying the high price at a restaurant to get it. So I did some research online, some experimentation in the kitchen, and came up with my own frugal and tasty recipe.


  • 5 cups of broccoli florets
  • 5 cups of chicken broth
  • 2 cups of half-n-half
  • 1/2 cup, plus 2 tbsp of flour
  • 2 cups of grated cheddar cheese
  • seasoning to taste
  • bacon pieces (optional to garnish)
  • small to medium sized bread bowls


  • Steam your broccoli florets until tender. Once they are tender, chop them finely and set them aside. (TIP: You can use a food processor for this step.)
  • Preheat your over to 325 degrees.
  • Turn your stove on medium to medium high heat.
  • In a large saucepan, combine the chicken broth and half-n-half.
  • Slowly whisk the flour into this liquid combination.
  • Continuously whisk this mixture until it starts to thicken. (Don’t let it get too thick.)
  • Add your chopped broccoli florets to sauce and reduce the heat to medium low.
  • Cook your mixture for another 5 minutes, stirring every once-in-awhile. (Make sure you monitor the heat and adjust it accordingly if you notice the mixture getting too thick.)
  • Add your seasoning to taste. (A little salt and pepper does the trick for me.)
  • Add your bread bowls to an oven safe pan and insert them in the oven for about 3 minutes. (Or until the outside of the bread bowls are nicely toasted to your family’s liking.)
  • Add the grated cheddar cheese to your soup and stir until the cheese has melted completely.
  • Turn stove to low. Cut the top of your breads off and remove some of the breading on the inside.
  • Scoop your soup into your bread bowls and garnish with the bacon pieces.
