PUBLIX ITALIAN DAYS – ITALIAN PORTOBELLO PIZZA RECIPE + A GIVEAWAY

I was really excited when I was contacted to participate in the Publix Italian Days promotion by coming up with my own recipe. I love cooking. It is one of the very few extracurricular activities that gives me joy other than my chaotic family. I was offered a $25 gift card to create a meal for my family using the products that Publix was advertising during this special. Armed with my gift card I went to Publix and was pleasantly surprised at the selection.

One thing that helped me stay within my budget were the coupons that were being offered in conjunction with Italian days. (These coupons can be printed off online as well.)

Armed with the last coupon on the list, plus a few coupons on my own I went to Publix and bout enough items with the $25 gift card to prepare two whole meals plus have several little items for separate meals. The recipe that I came up with was:

Italian Portobello Pizza

The items that I used were:
  • 1 package of Publix Italian sausage.
  • 2 cups of pre-chopped red, green, and yellow bell peppars.
  • 1 package of pepperoni slices.
  • 2 packages of mini pre-made pizza crusts.
  • 1/2  red onion coarsely chopped.
  • Bertolli Portobello Mushroom pasta sauce.
  • Sargento Parmesan & Romano shredded cheese.
  • Garlic.
  • Olive Oil.
  • Garlic salt.
  • Italian seasoning.

I started out by sauteing the red onions in one tablespoon of olive oil. While the onions were sauteing I added one tablespoon of garlic salt and one tablespoon of Italian seasoning. After 2-3 minutes I added in the bell peppers plus an addition half a tablespoon of olive oil and sauteed the vegetable mixture for an additional 2-3 minutes. (Enough for the vegetables to be soft, but to not have the onion get carmalized. I wanted them to still have a crunch to them.)

Once I was done sauteing the vegetable mixture, I place the veggies in a separate bowl. In the same pan I sauteed the package of Italian sausage that I bought. It contained five links inside. I split each link down the middle, removed the think layer of skin on the outside, and sauteed the sausage until completely done.

After the sausage was done, I drained the oil off of it and then it was time to assemble the pizza. I lightly coated the pre-made pizza crust with Olive Oil. I then added the pasta sauce and a generous helping of cheese. Once that was done I topped it with pepperoni, sausage, and the vegetable mixture. While I was doing this I preheated the oven to 450 degrees. Once I was done assembling the pizza I lowered the oven temperature to 400 degrees and baked the pizza directly on the rack for 8-10 minutes.

And voila! Italian Portobello Pizza. When I say that it was delicious I’m not exaggerating. It was really good. I served it with a side of seasoned broccoli and cauliflower plus some Publix brand sweet tea and it was really delicious. The good thing about this meal is that each of the boys were able to assemble their own pizza which made me even more fun for them. I had enough Italian sausage, sauteed vegetables, and pasta sauce left over to make spaghetti for the next nights dinner.
